I have an eevee that I know I /was/ EV training, but I'm not sure how far I got or if it's fully done. I had a plan for it that I abandoned when I realized its nature was neutral, but I'm sure someone else could want it.

Can anyone help me determine it?

I was definitely EVing it in attack and speed.

I also have an AR, but I'm not sure how I could go about using that to check.

EV's max attack stat with a quirky nature at lvl 37 is 80. So if its 72 right now there's still alot of ev's you need to put into attack.
If your eev's speed stat is 61, you've barely put any ev's into it, because it's max speed stat is also 80.
theres no way to know exactly how many Ev's your pokemon has, but i can guestimate, it could still use alot more.

Though it has a nuetral nature u should still keep it for in-game

Here is how you find your IV's and EV's. It' really important to know what IV's you have for Hidden Power types. EV's are for when you EV train [obviously] to know when you have reached your max; which is 255. Here you just activated the code by going to your "Summary" screen and the scroll over; while holding either of the following:
L -to see your EV's
R - To see your IV's

Nah, it's definitely best that I got a code because now I can check for any pokemon. ^^

Well back in the day i used to keep count of my Evs with the pokewatch couting evevery ev got and the using serebii to see ivs i recomnd you use this as well just incase remember to take a pencil and a paper too
